What the proprietor says

The School
is set in the beautiful Nottinghamshire countryside just nine miles from Nottingham City centre. The site has been an important staging post on the Fosseway for many centuries and a series of Inns have occupied the location. The present Manor was built in the 17th century and is still known locally as 'Dicks Turpin's House' due to his visits en route from London to York.

Today the house is home of a modern, comfortable and well equipped School of Cookery where every effort is made to ensure that you feel at home during your stay, however long your visit. We are sure that you will appreciate our comfortable bedrooms and reception rooms as well as the host facilities available.

Everything at the Manor reflects our high standards, above teaching. Claire Tuttey, the Principal, studied under Nuriel Downs and Sarah Nops at the Cordon Bleu School in London and was awarded a Diploma in 1979. She has worked and travelled throughout France, Italy, Switzerland and Ireland to gain her extensive knowledge of European cuisine, this having been complemented by the experience gained whilst working on the staff of two British cookery schools. Her talents have been recognised with many personal commendations in the press as well as in leading National and International Good Food Guides.

The standards at the Manor are high. Complex methods are made simple and advanced techniques fully explained to give students confidence in their cooking. This together with the wide range of recipes covered should equip any student to manage a smooth running kitchen whether it be in a domestic or commercial situation.

The Area
has a wealth of excellent local produce and culinary tradition. Here Stilton cheeses are characterised to a Village in the same way that French wines are associated to a particular hill side. The first Bramley apple tree still stands in Southwell, its fruit forming the basis 'Nottingham Pudding'. Everyone knows of Melton Mowbray Pork Pies, but few appreciate the rivalry between local bakers to produce the very best. The use of fresh local produce is the foundation of the principal's unique style of cuisine developed on the basis of a wide European tradition. Her absorbing interest and flair for cooking, coupled with an awareness of the full scope of gastronomy has culminated in the creation of the School.
